Easy Energy Eats - Simpson Trail Cookies
SIMPSON TRAIL COOKIES
2 ¼ C Gluten Free oatmeal
2 C light Spelt flour
1 C Sunflower seeds
¾ C Pumpkin seeds
½ C unsweetened shredded coconut
¼ C Chia/Hemp seed mix
1 C coconut sugar
1 Tbsp. cinnamon
2 Tsp. sea salt
1 ½ C mini dark chocolate chips
1 ¼ C dried cherries
¼ C molasses
¾ C melted coconut oil
1 ½ C unsweetened almond/coconut/cashew milk
Preheat oven to 350
Mix wet ingredients and dry ingredients separately and combine
Line baking sheets with parchment paper and use a 1/3 measuring cup to scoop the dough and then flatten them out slightly with spoon until about 1 inch thick like a hockey puck.
Place sheets in oven and bake for 20-25 minutes or until golden brown.
They freeze well.
